It is projected that the volume of mayonnaise-based products production by 2025 will increase to 929 thousand tons, according to analysts from OleoScope. It is expected that the production growth rate will be 4.5% annually. This growth is expected to be more significant than in 2024 when the volume of mayonnaise production increased by 2%. The largest participants in the Russian mayonnaise market are "Essen Production AG" and "Rusagro."
Andrey Kucherov, director of the competence center in the agro-industrial complex at "Rexoft Consulting," highlights the increase in exports as a factor contributing to the growth of mayonnaise and sauces production. According to data from the "Agroexport" center, Russian companies exported 15.5 thousand tons of mayonnaise-based products abroad in January-February, which is 20% more than the previous year. According to OleoScope's forecast, the export volume for the entire 2025 could reach 135 thousand tons, increasing by 12.5% compared to the previous year.
According to OleoScope's data, the share of exports from the total volume of mayonnaise-based products production per year may increase from 13.5% in 2024 to 14.5% in 2025.
According to the OleoScope report, last year 25% of the total volume of Russian mayonnaise exports in natural terms went to Kazakhstan, 13% to Belarus, 12.3% to Uzbekistan, 11% to Azerbaijan, and 8% to Georgia. Overall, countries of the post-Soviet space absorb 85% of foreign shipments, while the remaining part is directed to Asian markets, analysts specify. They point out that Russian mayonnaise is more affordable than European analogs and has a higher fat content. The share of imports in the Russian market remains insignificant — about 0.5%. According to Kucherov, niche products from South Korea are mainly imported.

According to Nielsen, during the period from April 2024 to the end of March 2025, retail sales of mayonnaise in natural terms decreased by 3.5% compared to the previous 12-month period, while sales of table sauces increased by 3.6%.
Ekaterina Nazarenko, a leading analyst at NTech, notes a 4% decrease in natural mayonnaise sales over the same period, despite an overall 5.7% market products growth.
According to Mrs. Nazarenko, mayonnaise consumption in Russia can stimulate the development of the public catering segment and the activation of kitchen factory construction. Elena Kuzmina, research director at the Institute for Entrepreneurship and Economics Development, also highlights the increase in mayonnaise and sauce consumption due to the development of the ready-to-eat food sector.
Production of mayonnaise-based products remains a profitable direction. The estimated average profitability in OleoScope is 15%. Analysts emphasize that this product is not considered socially significant.
